Stuffed Delicata Squash


This week to kick the fall recipe train off, I made up this recipe. I was really improvising as I was going. Bought a couple of acorn squashes without having a plan on how I would prepare them. But this improvised recipe turned out to be a hit!

Before I share the recipe, I want to share some of the different types of squashes and pumpkins that you can find at the grocery store. I use the delicata type, but this recipe works well with acorn squash as well and you can try to experiment with other types of squash or pumpkin that are in season. Some of my favorites include: spaghetti squash, butternut squash and now, after trying this recipe, acorn squash.

Now, here is the recipe.

Ingredients:

2 small delicata (you can use also acorn squash)

1/2 lbs of ground turkey

1/2 onion (chopped)

4 cups brussel sprouts (shaved)

4 spoons BBQ sauce

1/4 cup of beef / chicken stock

Salt and pepper

Olive oil


Instructions:

  • Preheat the oven at 375F.

  • Bake the squashes for 35-40 min or until tender.

  • On a pan sauté the onion. Add the ground turkey, season with salt, pepper and the BBQ sauce and cook until browned.

  • On a different pan cook the shaved brussel sprouts with the broth. Add salt and pepper to taste.

  • Once all the liquids have evaporated combine the brussel sprouts with the meat. Mix them well.

  • Cut the squashes on half and clean all the seeds.

  • Stuff the squashes with the meat mixture.

  • Serve and enjoy!


Note:

This recipe makes 4 servings. Each serving equates to half of a small squash.
